Basically, milk should be paid according to its :
composition
hygienic quality, and
quantity (volume of delivery in terms of litres of kilograms)

Each processor is free to determine the price of raw milk which mostly is based on a value given to fat and protein.
Furthermore it is common to have a bonus/penalty system for freezing point, bacteria and somatic cell count, presence of butyric
acid bacteria, method and volume of milk delivery/collection.
Suggestions were made for a payment system to be introduced in Romania by the Dutch-Romanian
raw milk quality control project.
